Why would I want to freeze this?

  1. Cook sweet potato fries according to package directions.
  2. Melt butter in saute pan over medium heat.
  3. Add mushrooms and cook until golden brown.
  4. Add in spinach and bell pepper.
  5. Cook until spinach is wilted and peppers are crisp tender.
  6. Add eggs to pan and cook gently.
  7. Place cooked sweet potato fries on tortilla and top with egg and veggie mixture.
  8. Roll tortilla into a wrap.
  9. Wrap with plastic wrap and divide among indicated number of freezer bags. Label and freeze.
