Why would I want to freeze this?
- Cook sweet potato fries according to package directions.
- Melt butter in saute pan over medium heat.
- Add mushrooms and cook until golden brown.
- Add in spinach and bell pepper.
- Cook until spinach is wilted and peppers are crisp tender.
- Add eggs to pan and cook gently.
- Place cooked sweet potato fries on tortilla and top with egg and veggie mixture.
- Roll tortilla into a wrap.
- Wrap with plastic wrap and divide among indicated number of freezer bags. Label and freeze.
