- Combine chicken and pesto in a gallon storage bag.
- Place in fridge to marinate for 2 hours.
- Meanwhile, soak wooden skewers in water for 10 minutes.
- After chicken has marinated, alternate chicken, mango, red onion and red pepper on skewers.
- Sprinkle with salt and pepper.
- Grill over medium heat, about 3-4 minutes per side.

Join the discussionI want to make this meal but I am confused by the freezer instructions. It says to divide the chicken and sauce among bags, but not how many bags. Also, the recipe says it serves 4, but is that the divided recipe or the whole recipe?

How do you prevent skewers from piercing the freezer bag??
Bri you have a couple options: 1) Remove the sharp end, or cover it. 2) Use tougher bags (or even double bag). 3) Use a foil pan. 4) Wait to skewer. Yes, if cooking from frozen, you will want to thaw first in the fridge.
