Sweet Summer Mango Kebabs

Ingredients

4 servings
  • ½ cups chop Basil, Fresh
  • 1 teaspoon mince Garlic, Cloves
  • 1 teaspoon Lemon Juice
  • ⅛ teaspoons Salt
  • ⅛ teaspoons Black Pepper
  • 3 tablespoons Olive Oil
  • 2 ½ cups dice Chicken, Boneless Breasts
  • 3 cups chunk Onion, Red
  • 2 cups chunk Bell Pepper, Red
  • 2 cups Mango, Chunks

Freezer Containers

  • 1 Gallon Freezer Bag
  • 1 Quart Freezer Bag

  • 8.Skewers

Directions

In a food processor, pulse basil, garlic, lemon juice, salt, and pepper until smooth. Slowly add olive oil and continue to pulse. Combine chicken and sauce in a freezer storage bag. Place in fridge to marinate for 2 hours. Meanwhile, soak wooden skewers in water for 10 minutes. After chicken has marinated, alternate chicken, mango, red onion and red pepper on skewers. Grill over medium heat, about 3-4 minutes per side.

Freezing Directions

In a food processor, pulse basil, garlic, lemon juice, salt, and pepper until smooth. Slowly add olive oil and continue to pulse. Divide sauce and chicken equally among gallon freezer bags. Divide fruit and vegetables between quart freezer bags. Place quart bag of veggies in gallon bag of chicken. Label and freeze.

Serving Day Directions

Assemble kebabs on skewers, alternating chicken, mango, red onion and red peppers on skewers. Grill over medium heat, about 3-4 minutes per side.
