Sweet Summer Mango Kebabs

Ingredients

4 servings
  • 2 ½ cups dice Chicken, Boneless Breasts
  • ⅓ cups Pesto
  • ⅛ teaspoons Salt
  • ⅛ teaspoons Black Pepper
  • 3 cups chunk Onion, Red
  • 1 ½ cups chunk Bell Pepper, Red
  • 1 ½ cups peel, pit, and chunk Mango

Freezer Containers

  • 1 Gallon Freezer Bag
  • 1 Quart Freezer Bag

Supplies

  • 8.Skewers

Directions

Combine chicken and pesto in a freezer storage bag. Place in fridge to marinate for 2 hours. Meanwhile, soak wooden skewers in water for 10 minutes. After chicken has marinated, alternate chicken, mango, red onion and red pepper on skewers. Sprinkle with salt and pepper. Grill over medium heat, about 3-4 minutes per side.

Freezing Directions

Combine chicken and pesto in a bowl and mix to cover chicken. Alternate chicken, mango, red onion and red pepper on skewers. Sprinkle with salt and pepper. Place skewers in freezer bags, label and freeze.

Serving Day Directions

Grill over medium heat, about 3-4 minutes per side.
