Thai Curry with Beef Brisket - Dinner Version

Ingredients

  • 1 tablespoon Coconut Oil
  • 2 tablespoons Yellow Curry Paste
  • 1 1/2 cups Coconut Milk, Canned
  • 2 tablespoons Coconut Aminos
  • 1 tablespoon Fish Sauce, Gluten Free
  • 2 tablespoons Apple Juice
  • 2 cups peel and chunk Sweet Potato
  • 1 1/4 cups dice Onion
  • 1/2 pounds Carrot, Baby
  • 1/8 teaspoons Salt #1
  • 1/8 teaspoons Black Pepper #1
  • 3 pounds pounds of Beef Brisket, cut into 1.5 inch chunks
  • 1/8 teaspoons Salt #2
  • 1/8 teaspoons Black Pepper #2

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. In saucepan, melt coconut oil.
  2. Stir in curry paste.
  3. Pour in coconut milk and bring to a simmer, stirring constantly.
  4. Add coconut aminos, fish sauce and apple juice, stirring to combine.
  5. Remove from heat and allow to cool.
  6. Combine sweet potatoes, onions and baby carrots together and season with salt #1 and pepper #1.
  7. Season meat cubes with salt #2 and pepper #2.
  8. Place vegetables on bottom of crockpot. Put meat on top of vegetables.
  9. Pour sauce over meat.
  10. Cover and cook on low for 8-10 hours.

  5. Remove from heat and allow to cool.
  6. Combine sweet potatoes, onions and baby carrots together and season with salt #1 and pepper #1.
  7. Divide vegetables into gallon freezer bags.
  8. After sauce cools, pour on top of vegetables in the bag, ensuring sweet potatoes are covered.
  9. Season meat cubes with salt #2 and pepper #2, then place on top of vegetables in freezer bags.
  10. Label and freeze.
