These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Soak chicken in ranch dressing for 30 minutes.
  2. In a shallow baking dish, combine Ritz cracker crumbs, Parmesan cheese and paprika.
  3. One at a time, dip chicken chunks into crumb mixture, pressing down to ensure entire surface of chicken is coated. Repeat until all chicken breast cubes are coated.
  4. Transfer to a greased cookie sheet.
  5. Bake at 400 for 15 minutes or until chicken in cooked through.
