Why would I want to freeze this?
- Combine the eggs, herbs and spices in a bowl.
- Heat bacon grease over medium heat in an oven proof skillet.
- Add cooked bacon to the pan first, then pour the egg mixture on top.
- Cook for 6-8 minutes until almost done.
- Add the tomatoes, onions and herbs on the top.
- Cook at 350 degrees for 15-20 minutes or until the top is set.
- Let cool.
- Cut into individual servings and wrap in plastic wrap.
- Divide wrapped slices among indicated number of bags, label & freeze.
