Ingredients

  • 12 individual Egg
  • 1 tablespoon chop Basil, Fresh
  • 1 tablespoon dice Oregano, Fresh
  • 1/8 teaspoons Salt
  • 1/8 teaspoons Black Pepper
  • 3/4 tablespoons Reserved Bacon Grease
  • 3/4 cups cook and dice Bacon
  • 2 1/4 cups slice Tomato
  • 1 1/4 cups dice Onion

Why would I want to freeze this?

  1. Combine the eggs, herbs and spices in a bowl.
  2. Heat bacon grease over medium heat in an oven proof skillet.
  3. Add cooked bacon to the pan first, then pour the egg mixture on top.
  4. Cook for 6-8 minutes until almost done.
  5. Add the tomatoes, onions and herbs on the top.
  6. Cook at 350 degrees for 15-20 minutes or until the top is set.
  7. Let cool.
  8. Cut into individual servings and wrap in plastic wrap.
  9. Divide wrapped slices among indicated number of bags, label & freeze.
