Tuna Melt Quesadilla - Lunch Version

<p>Give your toddlers a taste of tuna they will love....in a crispy quesadilla filled with a creamy and mild tuna mixture.</p>

  • 1/4 cups dice Green Onion (Scallion)
  • 1/2 cups dice Bell Pepper, Red
  • 12 ounces drain Chunk Light Tuna in Water
  • 1 cup Cheddar Cheese, Shredded
  • 1/4 cups Mayonnaise
  • 6 individual Flour Tortillas (8-inch/Med)

  1. In a bowl mix together all ingredients except tortillas.
  2. Heat a sauté pan over medium heat.
  3. Place one tortilla on skillet and then a heaping 1/2 cup full of mixture in each tortilla spreading to the edges. Top with another tortilla.
  4. Heat for 1 minute or until bottom tortilla is golden brown.
  5. Flip and heat for another 1-2 minutes until that bottom tortilla is golden brown.
  6. Transfer to plate and continue with remaining tortillas and filling.
  7. Using a pizza cutter, cut each quesadilla into 8 wedges.
