Why would I want to freeze this?
- Mash the potatoes in a bowl, then add in all remaining ingredients.
- Spoon mixture into a greased mini-muffin tin, using approximately 1 TBS per bite. Press lightly on top to flatten.
- Bake at 350 degrees for 20-25 minutes, or until lightly browned.
- Let cool.
