- In a food processor, pulverize the chickpeas using the "pulse" function until beans form a paste that sticks together when you squeeze it in your hand, being careful not to overprocess.
- Add the rest of the ingredients (except the oil and buns) and combine using the "pulse" function; batter will be somewhat grainy and speckled with herbs.
- Shape into patties using a 1/2 cup measure (for large) or 1/4 cup measure (for sliders).
- Heat oil over medium-high heat, using only the amount needed.
- Place chilled patties in hot oil small batches and fry until golden brown, about 3 minutes per side.
- Transfer patties to a baking tray and bake at 350 degrees for 8 minutes.
