  • 15 ounces rinse and drain Garbanzo Beans (Chick Peas), Canned
  • 1 tablespoon Poultry Seasoning
  • 1/2 cups Vital Wheat Gluten
  • 1/2 cups Bread Crumbs
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Black Pepper
  • 11 ounces Mandarin Oranges, Canned
  • 1/4 cups Vegetable Oil #1
  • 2 tablespoons White Wine Vinegar
  • 1 tablespoon Soy Sauce
  • 1/2 teaspoons Sesame Oil
  • 1/4 teaspoons Red Pepper Flakes

  • 1/2 cups Vegetable Oil #2
  • 4 cups Lettuce, Salad Mix
  • 1/2 cups Crispy Chow Mein Noodles

  1. Mash chickpeas.
  2. Combine with poultry seasoning, wheat gluten, breadcrumbs and salt and pepper.
  3. Form into 3-inch strips similar to chicken fingers. If tenders do not form easily, add a bit more wheat gluten until the strips hold together.
  4. Combine mandarin oranges (with liquid), oil #1, white wine vinegar, soy sauce, sesame oil and red pepper and set aside.
  5. Fry chickpea tenders in a skillet with oil #2 about 3-5 minutes per side.
  6. Top lettuce salad with tenders, mandarin sesame dressing and chow mein noodles.

Why would I want to freeze this?

  1. Mash chickpeas.
  2. Combine with poultry seasoning, wheat gluten, breadcrumbs and salt and pepper.
  3. Form into 3-inch strips similar to chicken fingers. If tenders do not form easily, add a bit more wheat gluten until the strips hold together.
  4. Wrap chickpea tenders in plastic wrap and divide among quart freezer bags.
  5. Combine mandarin oranges (with liquid), vegetable oil #1, white wine vinegar, soy sauce, sesame oil and red pepper and set aside.
  6. Divide dressing among pint freezer bags.
  7. Place a dressing bag in each tender bag, label and freeze.
