  1. Place cashews in a medium bowl. Cover with water #1.
  2. Allow cashews to sit for at least two hours.
  3. Combine cashews, lemon juice, water #2, salt, and garlic in a blender. Blend until smooth.
  4. Spread pizza sauce on pizza crust.
  5. Dollop cashew mixture on top of sauce.
  6. Cover with tomatoes, mushrooms, green peppers, red onions, and black olives.
  7. Bake pizza at 400 for 10-15 minutes.

  1. This cashew cheese is amazing! I topped my pizza with mushrooms, black olives, kale, and artichoke hearts and the cashew cheese made it perfect. I’ve already talked my guy into pizza again next week because I want to eat more of this cheese. You are my pizza hero.
