Vegetarian Taco Pizza

Ingredients

4 servings
  • 1 cup chop Lettuce, Leaf (serving day)
  • 2 tablespoons Greek Yogurt, Plain (serving day)

Directions

Mash olive oil, refried beans, and taco seasoning together in a bowl. Spread over pizza crust. Evenly sprinkle black beans over pizza, followed by black olives, tomatoes, onion, corn, cheese, cilantro, and tortilla chips. Place pizza on baking sheet. Bake at 425 degrees for 12 minutes or until cheese is melted. Top with lettuce and Greek yogurt.

Freezing Directions

Mash olive oil, refried beans, and taco seasoning together in a bowl. Spread over pizza crust. Evenly sprinkle black beans over pizza, followed by black olives, tomatoes, onion, corn, cheese, cilantro, and tortilla chips. Wrap in plastic wrap followed by foil. Place in gallon freezer bag if desired. Label and freeze.

Serving Day Directions

Place pizza on baking sheet. Bake at 425 for 12 minutes or until cheese is melted. Top with lettuce and Greek yogurt.

Regan first discovered freezer cooking the summer after her first year of law school, when she was a single mom to her then one year old.  Although short on time, she wanted to make sure she and her daughter were able to begin the tradition of eating healthy dinners together each night.
