  • 1 cup Flour, Whole Wheat
  • 1 cup Flour, All-Purpose
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoons Salt
  • 1/2 cups Brown Sugar
  • 5 teaspoons Butter, Unsalted
  • 1 individual Egg
  • 1 cup peel and mash Banana #1
  • 1/4 cups Skim Milk
  • 2 cups peel and dice Banana #2
  • 1/2 cups chop Walnuts

Why would I want to freeze this?

  1. In a mixing bowl, mix together whole wheat flour, all purpose flour, baking powder, baking soda and salt. Set aside.
  2. In another bowl, beat sugar and butter until light and fluffy.
  3. Mix in egg.
  4. Add flour mixture, mashed bananas #1 and milk to the butter mixture and mix, just until combined.
  5. Gently fold in diced bananas #2 and walnuts.
  6. Pour batter into greased loaf pan.
  7. Bake at 350 degrees for 1 hour.
  8. Cut into slices, wrap in plastic wrap, and place in freezer bags. Label and freeze.
