- 3 cups Flour, All-Purpose
- 1/2 cups Flaxseed
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1/2 teaspoons Cloves, Ground
- 1/2 teaspoons Nutmeg
- 1/2 teaspoons Cinnamon
- 3 individual Egg
- 1 cup Applesauce
- 1 tablespoon Vanilla Extract
- 2 cups Sugar
- 2 cups grate Zucchini

- Combine flour, flax, baking powder, baking soda, salt, cloves, nutmeg, and cinnamon in a bowl and sift together.
- Beat together eggs, applesauce, vanilla and sugar.
- Combine wet and dry ingredients, stir in zucchini.
- Place into muffin tins and bake at 350 for 30 minutes or until toothpick inserted comes out clean and the tops are brown.
- Let cool on a rack.
- Serve once cool.
