  • 2 1/4 cups Oat Bran
  • 1 tablespoon Baking Powder
  • 1/4 cups Brown Sugar
  • 1/4 teaspoons Cinnamon
  • 1/4 teaspoons Nutmeg
  • 2/3 cups peel and mash Banana
  • 1 1/4 cups Milk
  • 2 individual Egg White
  • 2 tablespoons Agave Nectar
  • 1/4 cups chop Walnuts

  1. Line a standard muffin tin with paper cups.
  2. In a mixing bowl, whisk together the oat bran, baking powder, brown sugar, cinnamon and nutmeg.
  3. In a separate mixing bowl, mix together the mashed bananas, milk, egg whites and agave nectar.
  4. Add the wet ingredients into the dry ingredients and whisk until combined.
  5. Fold in the walnuts.
  6. Divide the batter evenly between the muffin cups.
  7. Bake at 425 until the muffins are lightly browned and a knife inserted in the center comes out clean, about 12 to 15 minutes.
  8. Cool the muffins in the pan for 5 minutes, then remove to a wire rack to cool completely.
