Join the discussionI always have problems when I freeze strawberries, once they thaw they swell and seem to get sort of gummy. They are no longer like fresh cut strawberries. Do you have any sort of trick for this?
I think you will always have a little bit of a compromise, but not that much. Here’s a great post on how we like to flash freeze http://onceamonthmom.com/flash…
I just had this for dinner and it was absolutely amazing and soooooo much food I could barely finish.
This is one of my favorites as well!
Where can I find coconut flakes?
I find mine at my local Whole Foods. You should be able to find in any local grocer that carries more whole food/organic type products.
I have success freezing berries by leaving them unwashed until I thaw.
What could I substitute for coconut flakes? I do not like coconut at all.
You could use a dried fruit like raisins or dates instead to still give this a chewy/sweet ingredient.
I’m allergic to almonds and hazlenuts. Are there any other nuts that I can substitute for the almonds?
Erin,Cashews and macadamias would be delicious! Let us know how it turns out:)
I also add blackberries to this.
Great suggestion, Brittany!
