Berry Delicious Blueberry Oatmeal Pancakes

<p>Buttermilk soaked oats fortify these whole wheat blueberry pancakes with some extra nutritional value for a homemade breakfast that is as filling as it is tasty.</p>

  • 2 cups Buttermilk
  • 2 individual Egg
  • 2 tablespoons Vegetable Oil
  • 1/2 cups Flour, Whole Wheat
  • 1/4 cups Sugar

  • 1 teaspoon Baking Soda
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Vanilla Extract
  • 1 cup Blueberries

  1. Soak oats and buttermilk in refrigerator for 4 hours.
  2. Remove oatmeal/buttermilk mixture from fridge and remainder of ingredients except blueberries.
  3. Once mixed well, fold in blueberries.
  4. Heat skillet and spray with non-stick cooking spray.
  5. Once it is hot, place approximately 1/4 cup batter into the skillet.
  6. Cook pancake until golden brown underneath, then flip and cook the other side.
  7. Repeat with the remaining batter.
