  • 1 1/8 cups slice Onion, Yellow
  • 2 teaspoons Horseradish
  • 4 individual slice Sandwich Bread, Whole Wheat, Light
  • 1/2 pounds slice Roast Beef, Deli
  • 2 individual Swiss Cheese, Light, Sliced
  • 1 teaspoon Olive Oil #2

  1. In a skillet over medium high heat, add olive oil #1 and butter.
  2. Add onions and stir to coat. Reduce heat to medium.
  3. Let onions cook for 30 minutes stirring every 5 minutes, until onions are brown and caramelized.
  4. Spread 1 teaspoon of horseradish per sandwich on bread slices.
  5. Top with roast beef, onions and swiss cheese. Top with bread slice.
  6. Brush outsides of sandwiches with olive oil #2. Place sandwiches in panini press or cook on griddle.
  7. Cook until outside of sandwich is brown and cheese is melted.
