Cabbage and Winter Vegetable Soup - Lunch Version

<p>Warming up with a winter soup doesn't have to mean loading on the calories, packed with vegetables and only 1 WW point, this soup is a new winter freezer staple!</p>

Ingredients

  • 3/4 cups dice Onion, Yellow
  • 3/4 cups dice Carrot
  • 3 teaspoons mince Garlic, Cloves
  • 4 1/2 cups Beef Bone Broth/Stock
  • 1 1/2 tablespoons Tomato Paste
  • 3 cups dice Cabbage
  • 6 ounces Okra, Frozen
  • 1 1/2 teaspoons Basil, Dried
  • 1 1/2 teaspoons Oregano, Dried
  • 3/4 teaspoons Salt
  • 3/4 teaspoons Black Pepper
  • 1/3 cups dice Zucchini
  • 3/4 cups dice Squash, Yellow

  1. Using a non stick spray, saute onions, carrots and garlic for 5 minutes.
  2. Add beef broth, tomato paste, cabbage, okra, basil, oregano and salt & pepper.
  3. Simmer for 5-10 minutes until all vegetables are tender.
  4. Add zucchini and yellow squash and simmer an additional 5 minutes.
