Carrot Cherry Breakfast Cookies

  • 1 1/2 cups Flour, Pastry, Whole Wheat
  • 1 cup Rolled Oats
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking Powder
  • 1/2 teaspoons Salt
  • 1/2 cups melt Coconut Oil
  • 1/2 cups Maple Syrup
  • 1 cup grate Carrot
  • 1/2 cups dice Cherries, Dried
  • 2 teaspoons peel and mince Ginger, Fresh

  1. Line baking sheets with parchment paper.
  2. In a mixing bowl, combine flour, oats, cinnamon, baking powder and salt.
  3. In separate bowl, whisk together melted coconut oil, syrup, carrots, chopped dried cherries and ginger.
  4. Add wet ingredients to dry ingredients. Stir until combined.
  5. Let dough sit for 5 minutes.
  6. Spoon by heaping tablespoon onto prepared baking sheets.
  7. Bake at 350 degrees for 10 minutes or until cooked through.
  8. Transfer cookies to cooling rack and allow to cool.
