Chicken Parmigiana

<p>This freezer recipe would be my claim to fame in the kitchen! It is a rich tomato sauce (that is so very simple to make), over breaded chicken with Parmesan and mozzarella cheeses. Your family will think that you slaved away all day to make this one!</p>

Ingredients

  • 1 1/2 pounds Chicken, Boneless Breasts
  • 2 individual Egg
  • 1 teaspoon Salt
  • 1/8 teaspoons Black Pepper
  • 3/4 cups Bread Crumbs
  • 1/2 cups Olive Oil
  • 32 ounces Tomato Sauce
  • 1/4 teaspoons Garlic Powder
  • 2 tablespoons Butter
  • 1/2 cups Parmesan Cheese, Grated
  • 2 cups Mozzarella Cheese, Shredded

Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Place chicken breasts on cutting board. Pound lightly until they are .25 inch thick.
  2. Combine lightly beaten eggs, salt, and pepper in a shallow bowl.
  3. Place bread crumbs in another shallow bowl.
  4. Dip each piece of chicken in the egg mixture and then in the bread crumbs.
  5. Heat oil in skillet over medium heat.
  6. Quickly brown each piece of chicken on both sides.
  7. Remove chicken from skillet and divide among indicated number of 8x8 baking pans.
  8. Add tomato sauce and garlic powder to skillet. Heat until boiling.
  9. Simmer for 10 minutes, or until thickened.
  10. Stir in the butter.
  11. Pour tomato sauce mixture over chicken, dividing among pans.
  12. Sprinkle with Parmesan cheese and mozzarella cheese and cover with foil.
  13. Bake at 350 degrees for 30 minutes.
  14. Remove foil and bake for 10 minutes.
