Classic Homemade Yogurt Banana Bread

<p>Traditional banana bread made even better with the addition of vanilla yogurt in the batter.</p>

Ingredients

  • 2 cups Flour, All-Purpose
  • 3/4 teaspoons Baking Soda
  • 1/2 teaspoons Salt
  • 2 teaspoons Cinnamon
  • 1 cup Sugar
  • 1/4 cups Butter
  • 2 individual Egg
  • 1 cup peel and mash Banana
  • 1/3 cups Yogurt, Vanilla
  • 1 teaspoon Vanilla Extract

  1. In a medium bowl, combine flour, baking soda, salt and cinnamon.
  2. In a separate mixing bowl, add sugar and butter, and beat until well blended.
  3. Add eggs, one at a time.
  4. Add bananas, yogurt and vanilla, continuing to beat until well mixed.
  5. Add flour mixture, approximately 1/2 cup at a time, stirring just until moist.
  6. Pour batter into indicated number of well-greased loaf pans and bake at 350 for 60 minutes or until knife inserted into center of loaf comes out clean.
  7. Cool before serving.

  6. Pour batter into indicated number of well-greased loaf pans and bake at 350 for 60 minutes or until knife inserted into center of loaf comes out clean.
  7. Cool completely.
  8. Cut into slices, wrap individually in plastic wrap, then divide among indicated number of gallon freezer bags.
  9. Remove as much air as possible, label & freeze.
