Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. In a large mixing bowl, toss together sweet potatoes, maple syrup, coconut flakes #1, toasted pecans #1, butter, vanilla, cinnamon, nutmeg, salt and pepper.
  2. Pour contents of gallon bag onto a large rimmed baking sheet, arranging in a single layer.
  3. Roast at 375 degrees for 35-40 minutes or until tender, stirring occasionally.
  4. Remove from oven and mash slightly.
  5. Sprinkle coconut flakes #2 and toasted pecans #2 over roasted potatoes and stir to combine.
