- Spray skillet with a non stick cooking spray and heat over medium heat.
- In a bowl, combine egg substitute, bell pepper, green onions and garlic powder.
- Pour egg mixture into skillet and scramble eggs.
- Once eggs are cooked, divide into tortillas, top with cheese and fold tortillas in half.
- Spray skillet with a non stick cooking spray. Cook quesadillas on each side for 4 minutes.
- Remove from heat and serve.
