  • 1 1/3 pounds Pork Chops, Bone-In
  • 4 tablespoons Coconut Oil
  • 3 1/2 cups peel and dice Sweet Potato
  • 1/4 cups slice Onion, Red
  • 1/2 cups Orange Juice
  • 1/4 cups Maple Syrup
  • 1 teaspoon Sea Salt
  • 1 1/2 teaspoons Cinnamon
  • 1 teaspoon mince Garlic, Cloves
  • 1/3 cups Cranberries, Fresh
  • 2 teaspoons chop Rosemary, Fresh

  2. Place pork chops in a baking pan.
  3. Heat coconut oil in a non-stick skillet.
  4. Add sweet potatoes and red onion to skillet, cooking for 10 minutes, or until potatoes are tender.
  5. Remove from pan and place on top of chops in baking pan.
  6. Combine orange juice, maple syrup, and sea salt in a bowl, then pour over pork chops and vegetables.
  7. Sprinkle chops and potatoes with cinnamon, garlic, cranberries, and rosemary.
  8. Bake at 350F for 25-30 minutes.
