  1. In a bowl, mix together cranberries and sugar. Set aside for 5 minutes.
  2. Heat a skillet over medium high heat; spray with nonstick cooking spray.
  3. In a large bowl, mix together flour, salt, and baking powder.
  4. In another bowl, combine eggs, orange juice, oil, and milk. Stir well.
  5. Slowly pour liquid ingredients into dry ingredients and stir to combine. Add water if consistency is too thick.
  6. Fold in cranberry/sugar mixture.
  7. Pour 1/4 cup of batter on skillet and cook until bubbles begin to form in batter.
  8. Flip pancake and cook another 2-3 minutes, until golden brown on both sides.
  9. Repeat until all batter is cooked.
