Creamy Shrimp Skewers

Ingredients

4 servings
  • 2 ½ tablespoons Mayonnaise, Light
  • 2 tablespoons dice Green Onion (Scallion)
  • 1 ½ tablespoons Thai Sweet Chili Sauce
  • ½ teaspoons Sriracha Sauce
  • 40 individual Jumbo Shrimp, Fresh
  • ⅛ teaspoons Black Pepper

Freezer Containers

  • 2 Gallon Freezer Bags
  • 1 Quart Freezer Bag

Supplies

  • Cooking Sprays
  • 8.Skewers

Directions

Soak wooden skewers in water for 20 minutes. In a small bowl, mix mayonnaise, scallions, sweet chili sauce and Sriracha sauce. Season shrimp with black pepper. Thread 5 shrimp on each skewer. Grill shrimp over medium heat for 3-4 minutes per side until shrimp is opaque and cooked through. Remove shrimp from grill and place on platter. Brush sauce onto shrimp.

Freezing Directions

Soak wooden skewers for 20 minutes. In a small bowl, mix mayonnaise, scallions, sweet chili sauce and Sriracha sauce. Season shrimp with black pepper. Thread 5 shrimp on each skewer. Place skewers in freezer bag taking care not to poke holes in bag with skewer ends. Place sauce in quart bag, place quart bag inside gallon bag with shrimp. Label and freeze.

Serving Day Directions

Grill shrimp over medium heat for 3-4 minutes per side until shrimp is opaque and cooked through. Remove shrimp from grill and place on platter. Brush sauce onto shrimp.
