Curried Tofu Breakfast Quesadilla

Ingredients

  • 12 ounces Tofu, Firm
  • 2 tablespoons Curry Powder
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Black Pepper
  • 1/2 teaspoons Garlic Powder
  • 2 tablespoons Soy Milk, Unsweetened
  • 1 tablespoon Olive Oil
  • 1/3 cups dice Onion
  • 2 teaspoons mince Garlic, Cloves
  • 3/4 cups dice Bell Pepper, Green
  • 8 individual Flour Tortillas (6-inch/Small)
  • 4 ounces Cheddar Cheese, Shredded, Dairy Free

  1. Combine tofu, curry powder, salt, pepper, garlic powder and soymilk in a bowl.
  2. Blend together, crumbling tofu into scrambled-egglike consistency.
  3. Meanwhile, brown garlic and onion in a pan with olive oil.
  4. Add diced peppers and continue to cook over medium heat until peppers are at desired tenderness (about 5 minutes).
  5. Top tortillas with tofu mix, vegetables and dairy free cheese.
  6. Grill in greased skillet or on griddle for about 3 minutes per side.
  7. Repeat until all quesadillas have been cooked.
