Eggplant and Zucchini Chips

<p>Fried Eggplant and Zucchini Chips work great as an appetizer or side dish served with dipping sauces or they can be topped with mozzarella and marinara and baked for an easy Eggplant and Zucchini Parmesan.</p>

  • 2 1/2 cups slice Zucchini
  • 1 tablespoon Kosher Salt
  • 1/2 cups Flour, All-Purpose
  • 2 individual beat Egg
  • 1 cup Bread Crumbs
  • 1/2 cups Vegetable Oil

  1. Place vegetable slices in a colander or vegetable strainer.
  2. Sprinkle with kosher salt. Toss to coat.

  5. When veggies are ready, coat slices first in flour, then egg and finally breadcrumbs.
