Gluten Free Dairy Free Chicken Skewers - Dump and Go Dinner

<p>Delicious marinated chicken, fresh vegetables and pineapple combine to create a dynamic flavor. These skewers can be grilled or broiled and there is little mess to clean up!</p>

  • 1/4 cups Barbecue Sauce
  • 1/4 cups Peanut Butter, Creamy
  • 1/4 cups Soy Sauce, Gluten Free
  • 2 tablespoons Dijon Mustard
  • 3 1/2 cups chunk Chicken, Boneless Breasts
  • 20 ounces drain Chunks Pineapple, Canned
  • 2 1/2 cups chunk Bell Pepper, Red
  • 2 1/2 cups chunk Bell Pepper, Yellow
  • 1 1/2 cups chunk Zucchini

  1. Combine hot water, barbecue sauce, peanut butter, soy sauce and mustard to make marinade.
  2. Combine chicken pieces with about 1/4 of the marinade.
  3. Cover and place in the refrigerator for 1 1/2 hours.
  4. Soak skewers in water.
  5. Alternate chicken, pineapple and vegetables. Brush with the remaining marinade.
  6. Grill the skewers for approximately 6 minutes on each side, brushing with marinade halfway through.

  1. Combine hot water, barbecue sauce, peanut butter, soy sauce and mustard to make marinade.
  2. Combine chicken pieces with about 1/4 of the marinade and divide among the indicated number of quart freezer bags.
  3. Divide remaining marinade among the indicated number of pint freezer bags.
  4. Divide the pineapple and vegetables among the indicated number of gallon freezer bags.
  5. Place one bag each of chicken and marinade in each bag of vegetables.
  6. Label and freeze.

These directions help you cook or reheat this meal AFTER it's been frozen for when you are ready to eat it.

  1. Thaw: In fridge
  2. Alternate chicken, vegetables and pineapple onto skewers.
  3. Brush skewers with marinade.
  4. Place on grill or under broiler for approximately 6 minutes. Turn, marinate again and cook another 6 minutes.
