These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Combine flour #1, salt, baking powder, cinnamon, nutmeg, and sugar in a bowl.
- In another bowl, mix eggs, vanilla, oil, orange juice, and zest.
- Add wet ingredients to dry ingredients. Stir until just combined.
- Mix flour #2 and dried cranberries together. Fold into batter.
- Line muffin tin with muffin papers. Spray the inside of muffin papers with cooking spray.
- Fill muffin cups 2/3 full with batter.
- Bake at 350F for 18 minutes, or until toothpick comes out clean.

Join the discussionI’m sorry, what are GF flour blends #1 & #2? Are there instructions for prepping these blends somewhere?
This refers to a gluten free all purpose flour blend. It is used 2 times in the recipe, so we note #1 as the first instance and #2 as the second.
Is there a brand of gluten free flour mix that you recommend?
I personally use the Namaste brand. However, I have also had good luck with King Arthur all purpose Gluten Free Flour too.
These turned out very dense and dry. Was this just a GF flour substitution from a tradtitional muffin recipe, not accounting for the difference in flour blends for GF?
Tina – This recipe has been tested using an all purpose gluten free flour blend. However, it does not have the consistency of a traditional muffin, but is still very tasty. I typically use the Namaste brand gluten free flour blend from Costco.
So just use any store bought GF mix? Or is there a recipe for one on this site?

Britney, yes! You can sub AP flour and it should be just fine.
