  • ⅓ cups dice Tomato
  • ⅓ cups dice Mushrooms
  • ⅓ cups Cheddar Cheese, Shredded, Dairy Free

  1. Beat eggs in a bowl.
  2. Add broccoli, tomatoes, mushroom and dairy free cheese.
  3. Grease a coffee mug(s) with nonstick cooking spray and divide egg mixture among mugs.
  4. Microwave on high for 1 minute. Stir. Microwave an additional 30-45 seconds.

  1. I <3 this breakfast! I love changing up the veggies and I add a crumble of cooked bacon before the last 30-45 seconds. It's an excellent way to have a quick, fresh breakfast with a bunch of tasty and healthy veggies. I even make it without cheese and still enjoy it if I add salt and pepper.
