Hi Leah,
Typically I use homemade tortillas, made by myself or purchased from a local bakery if I’m short on time. We are going to be doing a post next month on making your own, as we have finally found a recipe we like! I will recommend some widely known brands though that I have used previously with good success, so I can be more of a help to you!

These are delicious! You can certainly omit the beans too!
I will also cut this in half, live alone & on a budget (sort of).
