- Beat together squash, eggs, and oil.
- Add dry ingredients, and mix well. If batter is too thick, add a few Tablespoons of water at a time until you achieve desired consistency.
- Drop by spoonfuls on hot, oiled griddle.
- Cook first side until bubbles begin to appear.
- Flip and cook until done.
- Repeat until all pancakes are cooked through.
