Grill Cook
These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Combine cooked chicken, black beans, corn and tomatoes and stir until mixed thoroughly.
- Roll dough out until it’s 12 inches in diameter and then coat one side with cornmeal.
- Transfer the dough to the preheated grill (to medium heat), close the lid and cook until the crust is lightly browned on the bottom (about 4-5 minutes).
- Flip the crust using a large spatula.
- Quickly spread the bbq sauce on the dough, top with the chicken mixture, and sprinkle on the cheese.
- Close the lid again and grill until the bottom of the dough is brown and the cheese has melted (about 4-5 minutes).

Join the discussionYou’re making me wish we didn’t have a new coating of snow… and it wasn’t 10 degrees F this morning!! We LOVE grilled pizza — ours is usually topped with mushrooms, spinach and red bell peppers. I like this combo, though, and we’ll look forward to giving it a try.
I’d love grilled pizza with spinach! Isn’t that the great thing about pizza…you can top it with all kinds of nutritional goodies!
I bet this would be particularly good with roasted corn that I buy frozen at Trader Joes. Also, red onions and a pile of fresh cilantro. YUM!
