  • 1 cup drain Whole Kernel Corn, Canned
  • 1 cup dice Tomato
  • 16 ounces Refrigerated Pizza Crust
  • 2 tablespoons Cornmeal
  • ½ cups Barbecue Sauce
  • 1 cup Mozzarella Cheese, Shredded

Make It Now Cooking Directions

Grill Cook

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Combine cooked chicken, black beans, corn and tomatoes and stir until mixed thoroughly.
  2. Roll dough out until it’s 12 inches in diameter and then coat one side with cornmeal.
  3. Transfer the dough to the preheated grill (to medium heat), close the lid and cook until the crust is lightly browned on the bottom (about 4-5 minutes).
  4. Flip the crust using a large spatula.
  5. Quickly spread the bbq sauce on the dough, top with the chicken mixture, and sprinkle on the cheese.
  6. Close the lid again and grill until the bottom of the dough is brown and the cheese has melted (about 4-5 minutes).

  1. You’re making me wish we didn’t have a new coating of snow… and it wasn’t 10 degrees F this morning!! We LOVE grilled pizza — ours is usually topped with mushrooms, spinach and red bell peppers. I like this combo, though, and we’ll look forward to giving it a try.

    1. I’d love grilled pizza with spinach! Isn’t that the great thing about pizza…you can top it with all kinds of nutritional goodies!

  2. I bet this would be particularly good with roasted corn that I buy frozen at Trader Joes. Also, red onions and a pile of fresh cilantro. YUM!
