Ice Cream Sandwiches

Ingredients

  • 16 tablespoons soften Butter
  • 1/2 cups Powdered Sugar
  • 1/4 cups Brown Sugar
  • 2 cups Flour, All-Purpose
  • 1/2 cups Cocoa Powder
  • 1/2 teaspoons Salt
  • 2 teaspoons Vanilla Extract
  • 1/2 cups chop Chocolate Chips, Bittersweet
  • 4 cups Ice Cream, Vanilla
  • 6 tablespoons Sprinkles

Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. With mixer, beat butter, powdered sugar and brown sugar until pale and fluffy.
  2. Stir dry ingredients together and add to mixer on low speed.
  3. Add vanilla and chocolate and blend until dough becomes dark brown.
  4. On floured surface, roll out dough to 1/4″ thickness and cut out cookies using round cookie cutter.
  5. Place on baking sheet covered in parchment paper.
  6. Bake at 350 for 15 minutes.
  7. Allow cookies to cool completely. Allow ice cream to soften slightly.
  8. Scoop approximately 1/2 cup of ice cream and place on cookie.
  9. Cover with another cookie.
  10. Roll sides of sandwich in sprinkles.
