Instant Pot Mango Pork - Dump and Go Dinner

<p>I got some inspiration from the Once A Month Mom & DOLE Frozen Fruit Menu contest entries. This recipe was an inspiration of looking at several different recipes to come up with one that worked for us. You could also substitute chicken if you aren't a fan of pork.</p>

Ingredients

  • 2 tablespoons Brown Sugar
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoons Kosher Salt
  • 1/2 teaspoons Black Pepper
  • 2 tablespoons Soy Sauce
  • 1 cup Apple Juice
  • 1 1/2 pounds Pork Tenderloin

  • 3 1/3 cups Mango, Frozen
  • 3 tablespoons Cornstarch

Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. **Due to the nature of pressure cooking there is always room for inconsistency. The times given here are based on 4 servings fresh. If you are using more servings you may need to increase your cooking time.**
  2. In a bowl, mix all ingredients except pork and frozen mango.
  3. Sear pork in Instant Pot using saute function.
  4. Cancel saute and add sauce to pot then add frozen mango.
  5. Lock lid into place and seal steam nozzle.
  6. Cook on high pressure for 5 minutes.
  7. Let pressure release naturally for 10 minutes, then release any remaining pressure.
  8. Remove pork and set Instant Pot to saute. Remove 1/4 cup of liquid from the pot and stir in cornstarch until combined.
  9. Add cornstarch mixture to the Instant Pot and let saute until thickened.
  10. Spoon mangos and sauce over pork to serve.

  1. Thaw: Prep from frozen
  2. **Depending on your container size/shape and your serving size, you may need to adjust cooking times given as it is based on 4 servings frozen in indicated container.**
  3. Add frozen contents to Instant Pot. Top with mango chunks.
  4. Lock lid into place and seal steam nozzle.
  5. Cook on high pressure for 5 minutes.
  6. Let pressure release naturally for 10 minutes, then release any remaining pressure.
  7. Remove pork and set Instant Pot to saute. Remove 1/4 cup of liquid from the pot and stir in cornstarch until combined.
