- In a mixing bowl whisk together eggs and water.
- Transfer to a large non stick skillet and scramble over medium heat.
- Once done cooking, transfer to a large bowl and cool completely.
- When eggs are cooled, add cheese, salt and pepper.
- Fill each tortilla with 1/2 cup of egg mixture and roll up.
