Light Lemon Chicken with Broccoli

Here is a simple meal great for any evening. Chicken is cooked and tossed with broccoli and red pepper cooked in chicken stock then tossed with lemon juice, lemon zest and parsley.

Light Lemon Chicken with Broccoli

Ingredients

  • 1 tablespoon Flour, All-Purpose
  • ¼ teaspoons Salt
  • 1 1 cups slice Chicken, Boneless Breasts
  • 2 teaspoons mince Garlic, Cloves
  • 1 ½ cups Chicken Broth/Stock
  • 2 ½ cups dice Broccoli
  • ½ cups slice Bell Pepper, Red
  • 2 teaspoons zest Lemon
  • 6 tablespoons chop Parsley, Fresh
  • 3 tablespoons juice Lemon

  1. Combine flour and salt in a shallow dish. Coat chicken in flour mixture.
  2. Heat a large skillet over medium heat. Place chicken and garlic in pan and brown about 5 minutes. Remove chicken.
  3. Add chicken broth to skillet. Bring to a boil over high heat.
  4. Add broccoli. Cover. Cook 2 minutes.
  5. Add red pepper. Cook an additional 1-2 minutes. Remove from the heat.
  6. Add chicken and remaining ingredients.
