Made from Scratch Cranberry Banana Bread

<p>This recipe jazzes up your standard banana bread. The cranberries provide color, a nice little pucker, and a big dose of antioxidants. Also, the bananas provide all the sweetness you need - no white sugar or flour - making this the perfect not-too-sweet snack or breakfast.</p>

  • 1 2/3 cups peel and mash Banana
  • 1/2 cups Applesauce
  • 1/2 cups Milk
  • 1 teaspoon Vanilla Extract
  • 2 individual Egg
  • 2 cups Flour, White Whole Wheat
  • 1/2 cups Rolled Oats
  • 1/2 cups Wheat Germ
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 3/4 teaspoons Cinnamon
  • 1/2 teaspoons Nutmeg
  • 3/4 cups Cranberries, Fresh
  • 1/2 cups chop Pecans
  • 1 teaspoon zest Orange

  1. Place mashed bananas in a large mixing bowl. Whisk in applesauce, milk, vanilla extract, and eggs.
  2. In a separate bowl, whisk together flour, oats, wheat germ, baking soda, baking powder, cinnamon, and nutmeg.
