The Happy Box last week included a lot of hearty summer vegetables along with a mango. I had chicken in the freezer that needed to get used up and I was inspired by the Mango Pico De Gallo on Our Best Bites. So I took to experimenting and came up with this dish.
Ingredients
- 1 pound Chicken, Boneless Breasts
- 1 cup peel, pit, and dice Mango
- ¼ cups Water
- ¼ cups juice Lime
- ¼ cups slice Green Onion (Scallion)
- ½ cups chop Cilantro, Fresh
- 1 ⅔ cups dice Carrot
- 1 ⅔ cups dice Zucchini
- 1 ⅔ cups dice Broccoli

Make It Now Cooking Directions
These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Spray 8×8 baking pan with cooking spray.
- Place chicken in pan.
- In a food processor, process mango, water and lime juice until pureed.
- Stir in green onions and cilantro.
- Pour over chicken.
- Place diced vegetables on top and around chicken.
- Bake in oven at 350 degrees for one hour or until chicken has reached 165 degrees.

cilantro, hot peppers (your desire), lime, green onion, salt, olive oil, garlic.use each according to your taste
place in food processor, blender or bullet
mix well
pour sauce over any meat
cook as desired (crock pot, bake, etc…)
a few days ago I did this::::
2.5 bunches cilantro
5 fresno chilis, roasted and peeled
8 cloves of garlic
9 green onions
2 tsp of sea salt
about 1/2 cup of olive oil, possibly more…
(i just pour until i am satisfied w/ consistency)
I added small sweet tomatoes, about 20
blended and pour over a pork roast
cooked in a pot with sauce for 2 hours at low heat setting… YUM ! with tortillas –
OH i used about 5 limes too, the really small ones….
