Microwave

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Combine sugar, flour, and salt in deep microwave safe mixing bowl.
  2. Add eggs and milk, then beat with whisk until smooth.
  3. Microwave at full power 8 minutes, stirring 3 times. (I set the microwave for 2-minute intervals.)
  4. Remove from microwave, and stir in vanilla and butter.
  5. Pour into pie shell.

    1. Unfortunately the writer who wrote this is no longer a part of the blog. I would say try the 3/8 and if you feel it needs more then add it!

  1. At any point in this coconut cream pie recipe are they going to tell me how much coconut, what kind of coconut and when to put it in?

      You are correct. Some choose to use a meringue topping and others choose not to – so for the sake of what would be best for our freezer cooking system – we didn’t include the meringue in this recipe. You are welcome to top with meringue if you would like. 🙂
