<p>A great summer breakfast on the go or by the pool, these Mixed Berry Protein Pops are a sweet and satisfying morning treat. Fresh berries are nestled between frozen layers of smooth, blended berry goodness and velvety vanilla coconut creme for a little pop of flavorful fun.</p>

Ingredients

  • 13 1/2 fluid ounces Coconut Milk, Canned
  • 1/2 cups Yogurt, Plain
  • 1/2 teaspoons Vanilla Extract
  • 1/4 cups Whey Protein, Vanilla
  • 1/2 cups Blueberries
  • 1/2 cups Raspberries
  • 1/4 cups Blackberries

Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. In a blender combine coconut milk, yogurt, vanilla extract and protein powder.
  2. Blend until smooth and combined.
  3. Remove half of the mixture from the blender.
  4. To mixture remaining in the blender, add half of the blueberries, half of the raspberries and all the of the blackberries.
  5. Blend until smooth.
  6. Set aside berry mixture.
  7. Divide the coconut milk mixture (white, no berries) amount allocated number of cups.
  8. Divide remaining whole blueberries and raspberries among the cups.
  9. Freeze 45 minutes.
  10. Remove cups from freezer and top with the reserved berry mixture.
  11. Place a popsicle stick into the center of each cup and freeze.
  12. To serve let the frozen cup sit at room temp for 10 minutes or run the cup portion under warm water for 20-30 seconds.
