Mom's Pasta E Fagioli soup is packed full of garden vegetables but light enough to be a great summertime lunch you can throw together in your slow cooker.

  • 15 ounces Diced Tomatoes, Rosemary and Oregano
  • 1 ¼ cups dice Onion
  • 1 ½ cups dice Carrot
  • ½ cups dice Celery
  • 30 ounces Diced Tomatoes with Garlic, Fire Roasted
  • 16 ounces rinse and drain Cannellini (White) Beans, Canned
  • 16 ounces drain and rinse Kidney (Dark Red) Beans, Canned
  • 73 fluid ounces Beef Bone Broth/Stock
  • 3 teaspoons Oregano, Dried
  • 2 teaspoons Black Pepper
  • 1 ½ teaspoons Cayenne Pepper Sauce
  • 5 teaspoons Parsley, Dried
  • 20 fluid ounces Pasta Sauce
  • 8 ounces Small Shells

  1. What a great tip about the crock pot. I never thought about it but I guess that since it is sealed it would be just fine. I do wonder if my dogs would wind up spending extra time out there sniffing around though.The soup looks great. Have you ever made a pumpkin soup before?

    1. I would recommend putting the crockpot on the front porch to be away from the dogs. I know my dog would manage to get into it and not just smell it. Here’s a link to our Butternut Poblano Soup- you could use pumpkin instead of butternut squash. http://onceamonthmom.com/butte

  2. This needs a giant crock pot! I’m glad I held off adding the stock until last, I could only use 30 oz and it’s filled to the lid.
    It smells delicious though, I can’t wait to dig in

      1. It was good! Next time I won’t leave the pasta in for 30 minutes though, it was a little overdone. Husband raved about it 🙂

  3. I’m making this right now! Just not in the crock pot! It smells soooooooooooo good!!! I cooked the pasta separately, and I *oops* used chicken broth instead of beef broth (*sigh* story of my life), but YUM. I’ll have to report how it goes after we all taste it!

  4. I made this today and it made the whole 6Qt crock put full. I’m am now having to beat my husband and daughter off it with a ladle. I see this becoming a regular in our house. Excellent recipe!

    1. Hi Laura, I freeze mine with the pasta in it for quick microwaving at lunch. But you could definitely cook it up until that last 30 minutes, freeze, and then reheat in the crockpot and add the pasta.

  5. I think I’ll add the pasta after thawing too. Not a fan of what freezing does to pasta. Just found your site and I am loving it!

    1. Hi Terry, welcome! We have several recipes that are pasta and I personally have found that if you cook it al dente it reheats in the oven perfectly. If you try it either way, let me know what you think!

  6. Could you not throw the ingredients in freezer bags before cooking (besides hamburger) and dump in the crock pot the day of?

    1. Joanna, you could- in fact, as long as your ground beef is browned like it should be it can go in the bag too. I would leave out the pasta shells though. I make mine before I freeze because I like to have it already cooked and available for lunch but it would work either way.

  7. Luv this reciepe!!!!! :-)It’s big hit at my house!!! I cook this on the stove in a stew pot on low heat since I don’t have a big crockpot. I also substituted the ground beef for ground turkey & I added fresh chopped basil and a teaspoon of ground white pepper to give it a nice fragrant flavor!!! Look foward to making this again!!!! Delish!!! 🙂

  8. I cook the pasta separate, then when I serve the fagioli, we scoop the pasta into the bottom of our bowl and add the soup on top. It is yummy topped with fresh grated Parmesan cheese
