These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Soak dates and apricots in hot water for 5 minutes. Reserve water.
- In a food processor, pulse together apricots, dates, salt, and nut butter until a paste is formed.
- Add cranberries and pulse.
- Add sunflower seeds and pulse just to combine.
- If the mixture is too dry, add 1 Tablespoon of the hot water in which the dates and apricots soaked.
- Form mixture into Tablespoon sized balls.
- Roll in coconut to coat.
