Philly Cheesesteak Stuffed Peppers

An old favorite, Philly Cheesesteak, gets a delicious makeover!

Ingredients

  • 3 medium Bell Pepper, Green
  • 2 cups Mozzarella Cheese, Shredded
  • 1 tablespoon Olive Oil
  • 1 1/2 cups slice Onion
  • 2 teaspoons mince Garlic, Cloves
  • 1/2 cups slice Mushrooms
  • 1 pound slice Roast Beef, Deli
  • 1 cup Beef Bone Broth/Stock
  • 1/2 teaspoons Salt
  • 1/4 teaspoons Black Pepper
  • 1/2 teaspoons Steak Seasoning

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Place pepper halves in baking dish. Place 2 Tablespoons cheese in each pepper.
  2. Heat olive oil in skillet over med-high heat.
  3. Add onion and garlic and saute until softened and onions begin to caramelize.
  4. Add mushrooms and continue to cook for about 3 minutes, stirring frequently.
  5. Add roast beef, beef broth, salt, pepper and steak seasoning. Allow mixture to come to a boil.
  6. Turn heat to low and simmer until most of liquid is evaporated.
  7. Spoon mixture into peppers.
  8. Bake at 375F for 20-30 minutes or until peppers are soft.
  9. Remove from oven. Evenly divide remaining cheese over peppers.
  10. Return to oven for 10 minutes, or until cheese is melted and bubbly.

  9. Cover baking dish with foil, label and freeze.

  1. Thaw: In fridge
  2. Remove freezer bag of cheese and set aside.
  3. Bake at 375F for 20-30 minutes or until peppers are soft.
