  • ¼ teaspoons mince Garlic, Cloves
  • 2 tablespoons juice Lime
  • ¼ teaspoons Salt
  • 2 tablespoons Olive Oil
  • 1 cup dice Onion
  • 2 cups peel and chop Corn, On the Cob
  • 2 cups dice Bell Pepper, Red
  • 1 cup rinse, drain, and cook Quinoa
  • 2 cups cook Black Beans, Dried
  • 2 cups cook Ground Beef
  • 4 individual Flour Tortillas, Whole Wheat (8-inch/Med)

  1. In a food processor or blender, mix together avocado, yogurt, chipotle chile, garlic, and lime juice.
  2. Sprinkle with salt and set aside.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add and saute onions, corn, and bell peppers until tender.
  5. Spread an equal amount of creamy chipotle sauce on each tortilla.
  6. Layer each evenly with cooked quinoa, sauteed vegetables, black beans, and cooked beef.

  1. The sauce is great, if the meat were seasoned they would be perfect! Without seasoning they were a little bland,but still good!
