Spicy Beef Lettuce Wraps

Ingredients

2 servings
  • 1 ½ cups cook Ground Beef
  • ½ cups dice Onion
  • ⅛ teaspoons Salt
  • ⅛ teaspoons Black Pepper
  • 2 teaspoons mince Garlic, Cloves
  • 1 teaspoon peel and mince Ginger, Fresh
  • 2 ½ tablespoons Sesame Oil
  • 2 ½ tablespoons Soy Sauce
  • 1 tablespoon Water, Hot
  • ½ teaspoons Honey
  • 1 tablespoon Sriracha Sauce
  • 1 ½ tablespoons juice Lime
  • ⅙ cups dice Green Onion (Scallion)
  • ¼ cups chop Peanuts
  • ¼ cups chop Cilantro, Fresh
  • 4 cups chop Lettuce, Romaine (serving day)

Directions

In a large skillet cook ground beef, onions, salt, and pepper for 3-4 minutes. Add garlic and ginger and cook until garlic and ginger are fragrant about 2-3 more minutes. In a small bowl, mix together sesame oil, soy sauce, water, honey, and Sriracha. Pour over beef and mix to coat. Cook a minute or two until slightly thickened. Remove from heat and stir in lime juice, green onion, peanuts, and cilantro. Serve over a bed of crunch lettuce (such as iceberg or romaine) or wrap in lettuce leaves.

Freezing Directions

Remove from heat and stir in lime juice, green onion, peanuts, and cilantro. Allow meat to cool. Spoon into indicated number of freezer bags. Label and freeze.

Serving Day Directions

Reheat on stovetop. Serve over a bed of romaine lettuce or wrap in romaine lettuce leaves.
