These simple vegetarian Spinach Lasagna Noodle Roll Ups are filled with a creamy mixture of ricotta and mozzarella and baked to warm, bubbly perfection. They are great to make ahead and freeze for busy nights you still want to enjoy a home cooked meal.

  • 12 individual Lasagna Noodles
  • 2 individual beat Egg
  • 2 ½ cups Ricotta Cheese
  • 2 ½ cups Mozzarella Cheese, Shredded
  • ½ cups Parmesan Cheese, Shredded
  • 10 ounces drain Spinach, Frozen
  • ¼ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • ¼ teaspoons Nutmeg
  • 26 fluid ounces Pasta Sauce

These directions help you cook or prepare this meal PRIOR to being frozen for serving later (see Serving Day Directions when you are ready to prepare it to eat).

Why would I want to freeze this?

  1. Cook lasagna noodles according to package directions.
  2. In a mixing bowl, mix eggs, ricotta, mozzarella, and Parmesan cheese, spinach, salt, pepper, and nutmeg.
  3. Drain lasagna noodles.
  4. Place 1 cup spaghetti sauce in bottom of indicated number of baking dishes.
  5. Spread approximately 1/3 cup filling over each lasagna noodle, roll up. Place seam side down in baking dishes.
  6. Pour remaining sauce over roll ups.
  7. Cover tightly with foil, label and freeze.

  2. Bake at 375 degrees for 20-25 minutes until hot and bubbly.

  1. This is a family favorite for us. We all love it, even the little ones. Easy to serve with a veggie and salad. It’s also nice enough to be served for a special event when you’d need a more elegant meal.
